Why Does Barley Usually Need Soaking?

whole barley is a hard, dense grain wrapped in a tough outer layer, so water takes a long time to get in. Soaking gives it a head start, so it cooks faster. Even then, whole barley takes 45–60 minutes on the stove. Barley flakes skip most of that, and ours skip all of it: they're ready to eat straight from the pack.

If you grew up with jau, you probably remember a bowl of it soaking overnight on the kitchen counter. Here's why.

What makes barley so hard?

Think of a whole barley grain as a tiny packet wrapped in a raincoat. That raincoat is the bran, the tough outer layer. Water can't rush in; it has to seep in slowly. Pearl barley has some of the bran polished off, so it cooks a little faster, but it's still slow compared with rice.

What does soaking actually do?

It's the same trick you use for rajma or chana. Soaking lets water get into the grain before you start cooking. The Whole Grains Council notes that a little pre-soaking makes cooking time much shorter, and the grain cooks more evenly.

How do barley flakes skip the soaking?

Flakes are barley grains pressed flat, like rolled oats. A thin flake has much more surface for liquid to soak into, so it softens fast. Our Barley Powerbowls go one step further: the flakes are baked, so they're ready to eat straight from the pack. No soaking. No cooking. No waiting.

  1. Empty the pack into a bowl.

  2. Pour in 150–200 ml of milk.

  3. Mix and eat.

You still get barley's nutty bite, plus 6.9–7.3 g of fibre in every Barley pack.
